METHOD
This is about assembly, not cooking. Use the best ingredients you can get.
What to do:
- Plate the base: Grab a wide, flat plate or shallow bowl. Spread the greens out first. Scatter the tomato halves over them.
- Add the cheese: Plop the stracciatella right in the center. Don't be neat. Let it spill out a little.
- Season: Drizzle a good amount of olive oil over everything. Squeeze the lemon juice over it. Hit the cheese and tomatoes with a pinch of the flaky salt.
- Finish: Right before serving, spoon ta caviar (any you like from Attilus Caviar range -Royal Oscietra, Beluga, Kaluga or Amur Fusion) directly onto the center of the creamy stracciatella.
