The Delany Drawing Room at Dukes London: where caviar meets whisky

The whisky lounge at Dukes London, in St James's, serves Attilus Royal Oscietra and Kaluga by the tin, a bump of Royal Oscietra beside a dram, and a cocktail with a caviar mini-bump.

The Delany Drawing Room, the whisky lounge at Dukes London on St James's Place, reopened on Monday 17 August 2026 with its whiskies, in the hotel's words, "alongside signature cocktails and caviar". The caviar page of the room's drinks menu names Attilus Caviar.

The room takes its name from Mary Delany, the eighteenth-century artist and botanist who lived on the same street. It is given over to whisky, with a Whisky Almanac for the full list, and through the year it hosts distillery-led whisky tastings. When the weather allows, drinks go out to The Delany Garden, a courtyard next to the room.

On the menu

The menu lists two caviars, Royal Oscietra and Kaluga, each in 30 g and 50 g tins, and every tin is served plain, on ice. It suggests 30 g for one or two people and 50 g for two to four.

Royal Oscietra. Large, firm grain; creamy, with a mellow length.

Kaluga. Large beads and a clean pop; rich and buttery, with a slight nutty undertone.

Then there is the Bump & Dram: a 10 g bump of caviar, served on the back of the hand, with a whisky of your choice. The menu recommends three pairings, each with Royal Oscietra: Caol Ila 12 Year Old, Highland Park 18 Year Old and Old Pulteney 18 Year Old.

The cocktail list has one caviar serve. The Nacre is single malt vodka, dry vermouth, Maraschino liqueur and a float of peated Scotch, with a caviar mini-bump, and the menu describes it as a journey "from the seaside to a Mayfair club".

The Attilus side

Attilus has raised sturgeon at Jessen, its own farm in Germany, since 2008. Kaluga comes from partner farms that Attilus's own people select from. Two minutes of the farm on film are in the Journal: ATTILUS Fishery.
