For the Soup:
· 1 small sugar pumpkin or butternut squash (about 2 lbs / 1 kg), peeled, seeded, and cubed
· 1 tbsp olive oil
· 1 large onion, chopped
· 2 cloves garlic, minced
· 4 cups vegetable or chicken broth
· ½ cup heavy cream or crème fraîche
· ½ tsp ground nutmeg
· Salt and white pepper to taste
For the Toasts & Topping:
· 4 slices of high-quality bread (baguette, sourdough, or brioche), crusts removed
· 2 tbsp butter or olive oil
· 1 jar (30-50g) caviar (Osetra, Sevruga, or Salmon Roe)
· Fresh chives, finely chopped (for garnish)
