INGREDIENTS
Serves 4
| Sturgeon steaks | 4 x 200g |
| Olive oil | 2 tbsp |
| Salt and pepper to taste | |
| Lemon cut into 4 wedges | 1 |
| Sprigs of parsley | 4 |
| Extra virgin olive oil for drizzling | 1 tbsp |
METHOD
1. In a shallow dish coat the sturgeon in the olive oil, then season with salt and pepper.
2. Heat a griddle pan to high, then grill the sturgeon on both sides for 3 minutes, or until just cooked.
3. Serve with lemon wedges, parsley and drizzle with extra virgin olive oil.
